  • 4 pieces boneless, skinless chicken breasts
  • Kosher salt and black pepper season to taste
  • 3 tbsp olive oil for cooking
  • 2 tbsp lemon juice
  • 2 tsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme or ½ tsp dried
  • 1 tsp fresh rosemary or ½ tsp dried

Method
 

Oven Method
  1. Preheat your oven to 400°F (200°C).
  2. Season chicken with salt and pepper.
  3. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium heat.
  4. Add chicken; cook for 5 minutes until golden.
  5. Mix lemon juice, zest, garlic, mustard, thyme, and rosemary in a bowl.
  6. Pour the mixture over the chicken. Roast for 15-20 minutes until cooked through.
Stovetop Method
  1. Season chicken with salt and pepper.
  2. In a skillet, heat oil over medium heat.
  3. Add chicken; brown for about 5 minutes on each side.
  4. Stir in lemon juice, zest, garlic, mustard, thyme, and rosemary.
  5. Cover the skillet and let it simmer for about 10 minutes until fully cooked.

Notes

For extra moisture, add a splash of chicken broth to the pan while cooking. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. This chicken can be served with sides like creamy mashed potatoes or steamed vegetables.
