Blackberry Filling Ingredients

  • 0.25 cups granulated sugar For filling
  • 2 tablespoons cornstarch Mixed with 2 tablespoons water
  • 1 tablespoon lemon juice
Whipped Cream Ingredients
  • 1.5 cups heavy whipping cream
  • 0.25 cups powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 8-inch or 9-inch cake pans.
  2. In one bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, oil, buttermilk, and vanilla.
  4. Combine both mixtures, then stir in the hot water until smooth.
Baking
  1. Divide the batter into the prepared pans and bake for 30 to 35 minutes.
  2. Allow the cakes to cool completely.
Making Filling
  1. For the filling, cook the blackberries and sugar over medium heat until juicy.
  2. Add the cornstarch mixture and lemon juice, stirring until thickened, then let it cool.
Whipped Cream
  1. Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
Assembling the Cake
  1. Layer the cake with the blackberry filling and top with whipped cream.
  2. Decorate with fresh blackberries, chocolate shavings, and edible flowers.
  3. Chill for at least 1 hour before slicing.

Notes

For best results, use room temperature ingredients and chill the cake to enhance flavors. You can make it vegan by substituting eggs with flaxseed meal and using plant-based milk.
