  • 8 oz Gluten-free pasta Cook according to package instructions
  • 6 slices Bacon or bacon substitute Cooked and chopped
  • 2 cups Lettuce (romaine or iceberg) Chopped
  • 2 cups Tomatoes Diced
Dressing
  • 1 cup Dairy-free mayo Adjust according to taste
  • 1 tsp Salt Adjust to taste
  • 1 tsp Pepper Adjust to taste
Optional Garnish
  • 1 bunch Green onions or chives Chopped, for garnish

Method
 

Preparation
  1. Cook the gluten-free pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, chopped bacon, chopped lettuce, and diced tomatoes.
  3. In a small bowl, mix dairy-free mayo with salt and pepper to taste.
  4. Pour the mayo mixture over the pasta salad and toss to combine.
  5. Garnish with green onions or chives if desired.
