Ingredients
  

For the crust
  • 1 cup unsalted butter, softened 2 sticks
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour divided
For the filling
  • 4 cups chopped fresh rhubarb about 1 lb
  • 1 cup granulated sugar for filling
  • 1/4 cup all-purpose flour for filling
  • 1/2 teaspoon ground cinnamon
For the topping
  • 1/2 cup packed light brown sugar
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour remaining for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch pan.
  2. In a mixing bowl, cream together the butter, sugar, and salt until fluffy.
  3. Gradually add 2 cups of flour until combined.
  4. Press this mixture into the bottom of the prepared pan to form a crust.
  5. In another bowl, mix the chopped rhubarb, 1 cup of sugar, 1/4 cup of flour, and cinnamon.
  6. Spread this filling evenly over the crust.
  7. In yet another bowl, combine the brown sugar, oats, and the remaining 1/2 cup of flour. Sprinkle this mixture over the rhubarb.
Baking
  1. Bake in the preheated oven for about 45 minutes until the top is golden brown.
  2. Let cool before cutting into bars.

Notes

For best results, chill the bars before cutting into them. Serve warm with vanilla ice cream, custard, or sprinkle with powdered sugar.
