Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch pan.
- In a mixing bowl, cream together the butter, sugar, and salt until fluffy.
- Gradually add 2 cups of flour until combined.
- Press this mixture into the bottom of the prepared pan to form a crust.
- In another bowl, mix the chopped rhubarb, 1 cup of sugar, 1/4 cup of flour, and cinnamon.
- Spread this filling evenly over the crust.
- In yet another bowl, combine the brown sugar, oats, and the remaining 1/2 cup of flour. Sprinkle this mixture over the rhubarb.
Baking
- Bake in the preheated oven for about 45 minutes until the top is golden brown.
- Let cool before cutting into bars.
Notes
For best results, chill the bars before cutting into them. Serve warm with vanilla ice cream, custard, or sprinkle with powdered sugar.
