Ingredients
  

For the Salmon Bites
  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs for coating
  • 1 tbsp olive oil or spray for crisping
For the Bang Bang Sauce
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust according to spice level
  • 1 tsp honey optional
For Serving
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 whole avocado (sliced)
  • ½ cup shredded carrots
  • 2 whole green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (or preheat the air fryer).
  2. Sprinkle the salmon cubes with garlic powder, smoked paprika, salt, and black pepper, mixing well.
  3. Coat each salmon cube in panko breadcrumbs.
  4. Place the coated salmon bites on a lined tray. Bake for 12-15 minutes, or air fry for about 8-10 minutes until crispy.
Bang Bang Sauce
  1. In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey if desired.
Assembly
  1. For serving, start with a base of rice, add in the salmon bites, then top with shredded cabbage, avocado, and carrots.
  2. Drizzle with the Bang Bang sauce and garnish with green onions, cilantro, and sesame seeds.

Notes

Keep an eye on the salmon bites to prevent overbaking, which can lead to dryness. You can substitute with other proteins like shrimp or tofu. Adjust sriracha for desired heat level.
