  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 cup mixed fresh vegetables (bell peppers, broccoli, snap peas) or your favorites
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust for desired heat level
Garnishes
  • 2 tablespoons green onions, chopped
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the mayonnaise, sweet chili sauce, and sriracha. Mix well until smooth and creamy; set aside.
  2. Season the diced chicken breast with salt and pepper.
Cooking
  1. Heat a skillet over medium heat, then add the chicken. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through.
  2. Add your chosen mixed fresh vegetables to the skillet with the cooked chicken. Stir-fry for an additional 3-4 minutes, allowing the vegetables to become tender but still crisp.
Assembly
  1. In serving bowls, layer the cooked rice at the bottom. Spoon the chicken and vegetable mixture on top, then generously drizzle with the Bang Bang sauce.
  2. Finish off by sprinkling chopped green onions over the bowls. Serve warm and enjoy!

Notes

For quick preparation, use leftover rotisserie chicken. Consider toppings like toasted sesame seeds or crunchy chow mein noodles for added texture.
