  • 0.5 cups nut butter (your choice) Almond, peanut, or sunflower butter work well.
  • 2 cups rolled oats For chewier bars, increase the oats a bit.
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup Adjust the amount to your desired sweetness.
  • 1 cup chocolate chips Use dairy-free chips for a vegan option.
  • 0.5 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F and line a 9×9 baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, nut butter, rolled oats, cinnamon, vanilla, maple syrup, chocolate chips, and salt. Mix until combined.
  3. Transfer the mixture to the lined baking pan and flatten it into an even layer. Sprinkle some extra chocolate chips on top if desired.
Baking
  1. Bake for 18 to 20 minutes, or until you see golden edges and the bars look set.
  2. Let cool completely before cutting into squares.

Notes

These bars last about 1 week in the fridge and up to 3 months in the freezer. Store in an airtight container, separating layers with parchment paper. For a quick treat, microwave for a few seconds to enjoy warm.
