Ingredients
  

Salmon and Seasoning
  • 4 pieces salmon fillets
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil

Avocado Lime Sauce
  • 1 ripe avocado
  • 1 lime, juiced
  • 1/4 cup Greek yogurt For a dairy-free option, substitute with cashew cream or dairy-free yogurt.
  • 1 clove garlic, minced
  • to taste fresh cilantro for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rub the salmon fillets with olive oil and season generously with Cajun seasoning, salt, and pepper.
  3. Place the salmon on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
  2. While the salmon is baking, prepare the avocado lime sauce by blending the avocado, lime juice, Greek yogurt, and minced garlic in a bowl until smooth.
Serving
  1. Serve the baked salmon topped with the avocado lime sauce and garnished with fresh cilantro.

Notes

For best results, use freshly ground Cajun seasoning and don’t overcook the salmon. If you have leftovers, store in airtight containers in the fridge for up to 3 days or freeze for up to 2 months.
