  • 12 pieces fresh jalapeño peppers Look for firm peppers with smooth skin.
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 12 slices bacon, cut in half Use thin-cut bacon for crispy results.
  • to taste Salt and pepper
  • 1 tablespoon chopped chives or green onions Optional, for garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each jalapeño in half lengthwise and remove the seeds and membranes if you want less heat.
  3. In a mixing bowl, blend the cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper until smooth.
  4. Spoon the cheese mixture generously into each half of the jalapeño.
Cooking
  1. Wrap each stuffed jalapeño with half a slice of bacon, securing with a toothpick if necessary.
  2. Arrange the wrapped jalapeños on the prepared baking sheet, spacing them apart.
  3. Bake in the preheated oven for 30-35 minutes or until the bacon is crispy and the cheese is bubbly.
  4. Remove from the oven and let the poppers cool for about 5 minutes.
Serving
  1. Garnish with chopped chives or green onions if desired and serve hot with your favorite dipping sauces like ranch or blue cheese.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
