  • 3 none eggs (lightly beaten)
  • 2 tablespoons mayonnaise Sub Greek yogurt for a lighter twist.
  • 1 none Salt and pepper To taste
  • 2 none ripe, seasonal tomatoes
  • 2 leaves Boston or romaine lettuce
  • 2 slices sandwich bread (whole grain or gluten-free)
  • 2 none toothpicks (optional) For securing the sandwich.

Cooking
  1. In a heated skillet, add your bacon slices. Cook until crispy.
  2. Remove the bacon and crack those eggs into the same pan. Stir slightly until soft and fluffy.
Preparation
  1. Mix the mayonnaise with salt and pepper in a small bowl for a tangy spread.
  2. Chop your tomatoes into thick, juicy slices.
Assembly
  1. On one slice of bread, layer lettuce, bacon, scrambled eggs, and tomatoes.
  2. Spread mayo on the other slice and top it off.
  3. Use a toothpick if needed, cut in half, and dive in!

Notes
