Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3 large eggs Room temperature preferred for better mixing
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk Regular milk with a splash of vinegar can be substituted
  • 2 cups Granny Smith apples, peeled and diced Firmer apples hold their shape better
Glaze Ingredients
  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, whisk together all dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the softened butter, eggs, vanilla extract, and buttermilk until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apples gently.
  6. Pour the batter into the prepared pan and spread it evenly.
Baking
  1. Bake for 30-35 minutes or until a toothpick comes out clean.
Glazing
  1. For the glaze, mix powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled cake and serve.

Notes

This cake can be topped with vanilla ice cream or whipped cream. Store covered at room temperature for 3-4 days or refrigerate for a week. The cake also freezes well for about a month.
