Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, whisk together all dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the softened butter, eggs, vanilla extract, and buttermilk until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the diced apples gently.
- Pour the batter into the prepared pan and spread it evenly.
Baking
- Bake for 30-35 minutes or until a toothpick comes out clean.
Glazing
- For the glaze, mix powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled cake and serve.
Notes
This cake can be topped with vanilla ice cream or whipped cream. Store covered at room temperature for 3-4 days or refrigerate for a week. The cake also freezes well for about a month.
