Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
Filling and Cooking
  • 1 medium apple, peeled and diced
  • as needed additional butter or oil for cooking

Method
 

Preparation
  1. In a bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, whisk together the buttermilk, egg, and melted butter.
  3. Combine the wet and dry ingredients, then fold in the diced apples.
Cooking
  1. Heat a skillet over medium heat and add a little butter or oil.
  2. Pour 1/4 cup of batter for each pancake onto the skillet.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown.
  4. Serve warm with syrup or additional apples.

Notes

Use fresh apples for maximum flavor. For extra fluffiness, separate the egg and beat the white until peaks form before folding it in. You can swap in your favorite type of flour or add a splash of vanilla for extra sweetness.
