  • 1 lb ground beef
  • 1 cup diced onion
  • 1 cup diced green bell pepper
  • 1 cup sliced mushrooms
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 2 cups prepared mashed potatoes
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional) For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef with the diced onion, bell pepper, and mushrooms until the beef is cooked through.
  3. Drain any excess fat.
  4. Stir in the cream of mushroom soup and milk, seasoning with salt and pepper to taste.
  5. In a greased baking dish, layer the beef mixture and top with prepared mashed potatoes.
  6. If desired, sprinkle with shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted.
  8. Serve warm and enjoy!

Notes

Store leftovers in the fridge for up to 3 days or freeze for about 3 months. Reheat in the oven for best texture. Consider pairing with a fresh side salad for a complete meal.
