Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the almond flour, baking soda, cinnamon, and salt.
  3. In another bowl, beat the eggs and add the melted coconut oil, maple syrup, and vanilla extract. Mix well.
  4. Combine the wet and dry ingredients until just blended.
  5. Fold in the sliced apples.
Baking
  1. Pour the batter into the prepared cake pan and spread evenly.
  2. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool before serving.

Notes

This cake keeps well for up to three days in the fridge or can be frozen for up to a month. Ensure to wrap tightly in plastic wrap for storage.
