Preparation
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, mix together the almond flour, baking soda, cinnamon, and salt.
- In another bowl, beat the eggs and add the melted coconut oil, maple syrup, and vanilla extract. Mix well.
- Combine the wet and dry ingredients until just blended.
- Fold in the sliced apples.
Baking
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
This cake keeps well for up to three days in the fridge or can be frozen for up to a month. Ensure to wrap tightly in plastic wrap for storage.
