Ingredients
  

Chicken
  • 2 pieces boneless, skinless chicken breasts (about 1 lb/450g)
Sauce
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon honey (optional, for extra sweetness)
Vegetables
  • 2 cups Brussels sprouts, trimmed and halved
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your air fryer to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, soy sauce, sweet chili sauce, rice vinegar, garlic powder, ginger, and honey (if using).
  3. Season the chicken breasts with salt and pepper, then coat them with the sweet chili mixture, ensuring they’re evenly covered.
Cooking
  1. Place the chicken breasts in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
  2. While the chicken is cooking, season the Brussels sprouts with olive oil, salt, and pepper, then place them in the air fryer basket as well.
  3. Cook the Brussels sprouts for 8-10 minutes, shaking halfway through, until they are crispy and golden brown.
  4. Let the chicken rest for a few minutes before slicing.
  5. Serve the sliced chicken with the crispy Brussels sprouts. Drizzle with any remaining sweet chili sauce from the air fryer basket if desired.

Notes

This dish can be stored in the fridge for about 3-4 days. Marinate the chicken and prep the Brussels sprouts a day in advance for convenience. Reheat in the air fryer for a few minutes to regain crispiness.
