Dough Ingredients
  • cups water
  • 4 cups all-purpose flour
Flavoring Ingredients
  • 2 tbsp soy sauce
  • 6 cups vegetable broth Seasoned broth for simmering
  • 1 tsp garlic powder
  • 2 tsp onion powder

Method
 

Preparation of Dough
  1. Mix the flour and water in a large bowl until you get a shaggy dough.
  2. Knead that dough on a clean surface for 8–10 minutes. If it feels sticky, sprinkle in some extra flour.
  3. Let it rest in water for 1–2 hours.
  4. Rinse the dough underwater repeatedly until it feels elastic and beige, tossing out the starchy water after the first few washes.
Cooking
  1. Shape the dough into a braid or knot.
  2. Simmer it in seasoned broth for 1 hour, flipping halfway through for even cooking.
  3. Cool it in the broth, then shred it with forks to your desired texture.

Notes

Store leftovers in broth for up to 7 days or freeze for later snacking. To reheat, simply toss it in a pot with some broth to bring it back to life.
